I love to cook, I've always loved to cook.

As a young girl, my time was spent reading the cookbooks that mum kept in the bottom kitchen drawer. Always looking for a new recipe to try, a new food idea. Many weekends were spent making rainbow cakes with as many colours as possible – have you seen my Instagram, not much has changed, and looking for recipes that I could cook using what was available in the cupboard or from the vegetable garden.

At the aged of about 16, I remember stating that I wanted to leave the farm and travel the world. This would be followed by retiring by about 30 and moving back to South Gippsland to grow vegetables and cook. From 16 fast forward 20 years and I returned, starting Jacican Food Studio in Mirboo North, Gippsland where I grow vegetables and cook. This blog is where I share my food adventure.

Gluten free cooking class is coming up, so I thought I would re-share my Orange Almond Cake recipe. This recipe is made with Rangpur Limes, ,but as explained in the recipe you can change to pretty much any citrus fruit you like. A recipe for Flourless Orange Cake at Jacican

Each month I attended the Warragul Farmers market, where I sell my wares - Preserves and lollies. It has been a very successful two years and for the market's 2nd birthday I was asked to make the birthday cake. Could I make one of my beautiful cakes to share with all the stall holders and market visitors? Of course I said yes.

The first step in making anything at Jacican is "What in season?" Currently in my area it is the start of the citrus seasons, so I needed to find some locally grown organic fruit. Luckily I have a family member with a secret citrus grove. And by secret I mean that it's at the bottom of the farm, down a hill, you can't see it form the road and it happens that noone really uses the fruit. So I made the trip to the family members house, tracked down the paddock and found lemon, limes, grapefruit, oranges and a lemon - mandarin cross called Rangpur lime.

Back up the hill and home to make a Orange Rangpur Lime Almond cake.

 

Ingredients

  • 400 gms ground almonds or walnuts

  • 10 eggs

  • 400 gms raw sugar

  • 2 tsp baking powder

  • 2 oranges (in this case the fruit is smaller than commercial grown fruit, so I used 2 Rangpur Limes and 2 Oranges)

Method

  1. Place the oranges in a saucepan and cover with water.

  2. Bring to the boil and simmer for 2 hours, or until the oranges are soft and cooked through. You may need to top up the water as the water level drops to keep the oranges covered.

  3. Once cooked, remove the oranges from the water. Allow the oranges to cool a little before breaking them open to remove the pith and pips. You may want to break the oranges up a little at this stage – it will help make the next step easier.

  4. In a food processor, puree the oranges. Add the eggs and sugar and continue to mix.

  5. Add the ground almonds/walnuts and the baking powder and mix.

  6. Fill a lined 25cm round cake tin with the orange cake mix.

  7. Bake in a 180 degree oven for 1 hour.

You can compare organic grown citrus with commercial fruit; Organic Orange, Commercial grown Orange, Organic Rangpur Orange.

Note: If I was to use commercial brought oranges I would only use 2 oranges - not the 2 Rangpur Limes and 2 Oranges I used in this recipe.
