I love to cook, I've always loved to cook.

As a young girl, my time was spent reading the cookbooks that mum kept in the bottom kitchen drawer. Always looking for a new recipe to try, a new food idea. Many weekends were spent making rainbow cakes with as many colours as possible – have you seen my Instagram, not much has changed, and looking for recipes that I could cook using what was available in the cupboard or from the vegetable garden.

At the aged of about 16, I remember stating that I wanted to leave the farm and travel the world. This would be followed by retiring by about 30 and moving back to South Gippsland to grow vegetables and cook. From 16 fast forward 20 years and I returned, starting Jacican Food Studio in Mirboo North, Gippsland where I grow vegetables and cook. This blog is where I share my food adventure.

This is a recipe I share and you will bake in our Gluten-Free Baking class.

Banana Bread

Not only is our banana bread gluten free but also dairy free, egg free and uses no processed sugar. So if you're after something to cook your vegan friends substitute the honey for a sweetener like maple/rice syrup and suddenly you're vegan friendly.

Ingredients

125 grams of Soft Tofu
200 grams of Honey (substitute with maple syrup for a vegan option)
40 grams of Vegetable Oil
1 teaspoon of Vanilla
2 Bananas
1 teaspoon of Egg Replacer
270 grams of Gluten Free Flour
1/2 a teaspoon of Baking Powder
1/2 a teaspoon of Bi-Carb Soda
A pinch of salt
1 tablespoon of Poppy Seeds

 

Method

Pre-heat the oven to 180C

Line and Grease a 23cm Loaf Tin
Place the tofu, honey, vegetable oil, vanilla, bananas and egg replacer into the bowl of the food processor. Cream the ingredients together.

Jacican Banana Bread Gluten Free 005  Jacican Banana Bread Gluten Free 004In a bowl combine, flour baking bowder and bi-carb soda. Add the mixture to the food processor along with a pinch of salt. Process the mixture until it is fully combined and creamy.

Pour the mixture into the prepared loaf tin. Bake for 30-35 minutes.

Cool the bread in the tin before attempting to remove.


Can be iced with cream cheese and served as a cake or bread with a spread of butter. Hope you enjoy your vegan freindly banana bread!
